Use thinly sliced potatoes as a crust for quiche. Line the bottom of a pie plate with the potatoes, slightly overlapping them. Brush with melted butter (see photo). Bake in a 375-degree oven for about 10 minutes. Pour in the eggs, cheese and other ingredients. Sliced potatoes can also be used as a topping.
